🌿 Ingredients:
- 4 hard-boiled eggs, peeled and chopped
- 1 ripe avocado, mashed
- 1 tsp Dijon mustard (or to taste)
- 1 tbsp lemon juice or lime juice
- Salt and black pepper, to taste
- Optional: chopped chives, parsley, or a pinch of paprika
- 4 slices whole grain bread (or gluten-free if preferred)
- Optional toppings: lettuce, spinach, sliced tomato, microgreens
👩🍳 Instructions:
- In a bowl, mash the avocado with lemon juice, Dijon mustard, salt, and pepper.
- Add chopped hard-boiled eggs and gently mix until combined.
- Stir in herbs or spices if using.
- Toast your bread if desired.
- Spoon the egg salad onto two slices of bread and add any toppings you like.
- Top with the other slices, cut in half, and serve!
