🌿 Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups water or vegetable broth
  • 1 medium sweet potato, peeled and diced
  • 1 tbsp olive oil
  • 1/2 tsp paprika
  • 1 cup cooked black beans (or 1 can, rinsed and drained)
  • 1 cup kale or spinach, chopped
  • 1 small avocado, sliced
  • Salt and pepper, to taste

For the tahini dressing:

  • 2 tbsp tahini
  • 1 tbsp lemon juice
  • 1 tsp maple syrup or honey
  • 1–2 tbsp warm water (to thin)
  • Pinch of garlic powder and salt

👩‍🍳 Instructions:

  1. Cook quinoa: Bring quinoa and water or broth to a boil, reduce to low, cover, and simmer for ~15 minutes until fluffy.
  2. Roast sweet potato: Toss cubes in olive oil, paprika, salt, and pepper. Roast at 400°F (200°C) for 20 minutes or until tender and slightly crisp.
  3. Prepare dressing: Whisk all tahini dressing ingredients together until smooth. Add water as needed to reach desired consistency.
  4. Assemble bowl: Layer cooked quinoa, roasted sweet potato, black beans, and greens. Top with sliced avocado.
  5. Drizzle dressing over everything and enjoy warm or chilled!
