🌿 Ingredients:
- 2 fillets of cod (or other white fish like haddock or halibut)
- 1 bunch asparagus, trimmed
- 2 tbsp olive oil
- 1 clove garlic, minced
- Juice of 1 lemon + a few lemon slices
- 1/2 tsp dried thyme or oregano
- Salt and black pepper, to taste
- Optional: paprika or chili flakes for a kick
👩🍳 Instructions:
- Preheat oven to 400°F (200°C).
- Place cod fillets on a lined baking sheet or in a baking dish.
- Arrange asparagus around the fish.
- In a small bowl, mix olive oil, garlic, lemon juice, herbs, salt, and pepper.
- Drizzle mixture over both fish and asparagus. Top fish with lemon slices.
- Bake for 15–20 minutes, until cod flakes easily with a fork and asparagus is tender.
