Ingredients:

  • 8 oz rice noodles
  • 1 carrot, julienned
  • ½ bell pepper, sliced
  • 2 tbsp peanut butter
  • 1 tbsp soy sauce
  • 1 tsp lime juice
  • 1 tsp maple syrup

Instructions:

  1. Cook noodles and toss with vegetables.
  2. Whisk peanut sauce ingredients and mix into noodles.
  3. Top with crushed peanuts and cilantro.

Tip: Add tofu or tempeh for extra protein.
