Ingredients:

  • 1 cup cooked rice noodles
  • ½ cup shredded carrots
  • ½ cup red cabbage
  • 2 tbsp peanut butter
  • 1 tbsp soy sauce
  • 1 tsp lime juice
  • 1 tsp maple syrup

Instructions:

  1. Mix peanut butter, soy sauce, lime juice, and syrup into a dressing.
  2. Toss noodles and veggies with dressing.
  3. Top with crushed peanuts.

Tip: Serve warm or chilled.
