Ingredients:
- 1 cup dry lentils, cooked
- 1 tsp cumin
- 1 tsp chili powder
- ½ onion, diced
- 1 tbsp tomato paste
- Corn tortillas
- Toppings: avocado, salsa, lettuce
Instructions:
- Cook lentils and set aside.
- Sauté onion, add spices and tomato paste. Mix in lentils.
- Spoon into tortillas and top with your favorites.
Tip: Add a squeeze of lime and chopped cilantro for a zesty finish.
