Protein-packed and flavor-rich, these tacos are ideal for Meatless Mondays.

Ingredients:

  • 1 cup dry lentils, cooked
  • 1 tsp cumin
  • 1 tsp chili powder
  • ½ onion, diced
  • 1 tbsp tomato paste
  • Corn tortillas
  • Toppings: avocado, salsa, lettuce

Instructions:

  1. Cook lentils and set aside.
  2. Sauté onion, add spices and tomato paste. Mix in lentils.
  3. Spoon into tortillas and top with your favorites.

Tip: Add a squeeze of lime and chopped cilantro for a zesty finish.
