Vegan Chickpea “Tuna” Salad

Tastes like tuna, but it’s totally plant-based!

Ingredients:

  • 1 can chickpeas, mashed, egg
  • 2 tbsp vegan mayo
  • 1 tbsp mustard
  • 1 tbsp chopped pickles
  • Salt, pepper, and dill

Instructions:

  1. Mash chickpeas in a bowl.
  2. Mix in remaining ingredients.
  3. Serve on whole grain bread, in a wrap, or over lettuce.

Tip: Add nori flakes for a subtle “seafood” flavor.
