Lentil & Sweet Potato Curry

🌿 Ingredients:

  • 1 tbsp coconut oil or olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp curry powder
  • 1/2 tsp turmeric
  • 1 medium sweet potato, peeled and diced
  • 3/4 cup red lentils, rinsed
  • 1 can (400ml) coconut milk
  • 2 cups vegetable broth
  • 1 handful spinach or kale (optional)
  • Salt and pepper, to taste
  • Fresh cilantro and lime wedges, for serving

👩‍🍳 Instructions:

  1. Heat oil in a large pot over medium heat. Add onion and sauté 5 minutes.
  2. Stir in garlic, ginger, curry powder, and turmeric. Cook 1–2 minutes until fragrant.
  3. Add sweet potato, lentils, coconut milk, and broth. Bring to a boil.
  4. Reduce heat, cover, and simmer for 25–30 minutes until lentils and potatoes are tender.
  5. Stir in spinach and cook until wilted.
  6. Season with salt and pepper. Serve with rice or naan, topped with cilantro and a squeeze of lime.
