A low-carb take on the classic comfort food.

Ingredients:

  • 1 large eggplant (sliced)
  • 1 lb ground beef
  • 1 cup ricotta
  • 1 cup mozzarella
  • ½ cup tomato sauce (no sugar added)
  • Italian seasoning

Instructions:

  1. Roast eggplant slices.
  2. Cook beef and mix with tomato sauce.
  3. Layer eggplant, meat sauce, ricotta, and mozzarella.
  4. Bake at 375°F (190°C) for 25 mins.

Tip: Use zucchini slices if you don’t have eggplant.
