Keto Cauliflower Fried Rice

Overview:
This keto version of fried rice is just as satisfying without the carbs.

Ingredients:

  • 1 small cauliflower head (riced)
  • 2 eggs
  • 2 tbsp sesame oil
  • ½ cup diced carrots
  • ½ cup peas
  • 2 tbsp soy sauce or coconut aminos

Instructions:

  1. Scramble eggs, then set aside.
  2. Stir-fry veggies in sesame oil.
  3. Add cauliflower rice and soy sauce.
  4. Mix in eggs and cook 5 mins.

Tip: Add cooked shrimp or chicken for protein.
