Overview:
This keto version of fried rice is just as satisfying without the carbs.
Ingredients:
- 1 small cauliflower head (riced)
- 2 eggs
- 2 tbsp sesame oil
- ½ cup diced carrots
- ½ cup peas
- 2 tbsp soy sauce or coconut aminos
Instructions:
- Scramble eggs, then set aside.
- Stir-fry veggies in sesame oil.
- Add cauliflower rice and soy sauce.
- Mix in eggs and cook 5 mins.
Tip: Add cooked shrimp or chicken for protein.
