Baked Lemon Herb Chicken with Roasted Vegetables

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • Juice and zest of 1 lemon
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • 3 cups mixed vegetables (zucchini, bell peppers, carrots, broccoli), chopped

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix olive oil, lemon juice and zest, garlic, oregano, salt, and pepper.
  3. Place chicken breasts and vegetables in a baking dish. Pour marinade over and toss to coat.
  4. Bake for 25–30 minutes until chicken is cooked through and vegetables are tender.
  5. Serve warm with a side of quinoa or brown rice.
