Ingredients:
- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- Juice and zest of 1 lemon
- 2 cloves garlic, minced
- 1 tsp dried oregano
- Salt and pepper, to taste
- 3 cups mixed vegetables (zucchini, bell peppers, carrots, broccoli), chopped
Instructions:
- Preheat oven to 400°F (200°C).
- In a bowl, mix olive oil, lemon juice and zest, garlic, oregano, salt, and pepper.
- Place chicken breasts and vegetables in a baking dish. Pour marinade over and toss to coat.
- Bake for 25–30 minutes until chicken is cooked through and vegetables are tender.
- Serve warm with a side of quinoa or brown rice.
