๐ŸŒฟ Ingredients:

  • 1 tbsp coconut oil or olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp curry powder
  • 1/2 tsp turmeric
  • 1 medium sweet potato, peeled and diced
  • 3/4 cup red lentils, rinsed
  • 1 can (400ml) coconut milk
  • 2 cups vegetable broth
  • 1 handful spinach or kale (optional)
  • Salt and pepper, to taste
  • Fresh cilantro and lime wedges, for serving

  1. Heat oil in a large pot over medium heat. Add onion and sautรฉ 5 minutes.
  2. Stir in garlic, ginger, curry powder, and turmeric. Cook 1โ€“2 minutes until fragrant.
  3. Add sweet potato, lentils, coconut milk, and broth. Bring to a boil.
  4. Reduce heat, cover, and simmer for 25โ€“30 minutes until lentils and potatoes are tender.
  5. Stir in spinach and cook until wilted.
  6. Season with salt and pepper. Serve with rice or naan, topped with cilantro and a squeeze of lime.
