🌿 Ingredients:
- 1 tbsp coconut oil or olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tbsp curry powder
- 1/2 tsp turmeric
- 1 medium sweet potato, peeled and diced
- 3/4 cup red lentils, rinsed
- 1 can (400ml) coconut milk
- 2 cups vegetable broth
- 1 handful spinach or kale (optional)
- Salt and pepper, to taste
- Fresh cilantro and lime wedges, for serving
👩🍳 Instructions:
- Heat oil in a large pot over medium heat. Add onion and sauté 5 minutes.
- Stir in garlic, ginger, curry powder, and turmeric. Cook 1–2 minutes until fragrant.
- Add sweet potato, lentils, coconut milk, and broth. Bring to a boil.
- Reduce heat, cover, and simmer for 25–30 minutes until lentils and potatoes are tender.
- Stir in spinach and cook until wilted.
- Season with salt and pepper. Serve with rice or naan, topped with cilantro and a squeeze of lime.
