🐟 Grilled Salmon & Greens

🌿 Ingredients:

  • 2 salmon fillets (about 150–200g each)
  • 1 tbsp olive oil
  • Juice of 1/2 lemon
  • 1/2 tsp garlic powder or 1 clove minced garlic
  • Salt and black pepper, to taste
  • 4 cups mixed greens (arugula, spinach, or spring mix)
  • 1 cup cherry tomatoes, halved
  • Optional: sliced cucumber, avocado, or red onion

For the lemon vinaigrette:

  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1/2 tsp honey (or maple syrup)
  • Salt and pepper, to taste

👩‍🍳 Instructions:

  1. Preheat grill or grill pan over medium-high heat.
  2. Rub salmon fillets with olive oil, lemon juice, garlic, salt, and pepper.
  3. Grill salmon skin-side down for 4–5 minutes, then flip and cook 2–3 minutes until done (flakes easily with a fork).
  4. In a large bowl, toss greens and tomatoes with the lemon vinaigrette.
  5. Plate salad and top with grilled salmon. Garnish with avocado or red onion if desired.
