🌿 Ingredients:

  • 100g soba noodles (buckwheat noodles)
  • 1/2 cup edamame, cooked and shelled
  • 1/2 red bell pepper, thinly sliced
  • 1 cup shredded purple cabbage
  • 2 green onions, sliced
  • 1 tsp toasted sesame seeds (optional)
  • Optional: carrot ribbons, cucumber, or fresh cilantro

For the sesame-ginger dressing:

  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tsp grated fresh ginger
  • 1/2 tsp maple syrup or honey
  • Optional: a dash of chili flakes or sriracha for heat

👩‍🍳 Instructions:

  1. Cook soba noodles according to package directions (usually ~5 minutes). Rinse under cold water and drain well.
  2. While noodles cool, prepare your vegetables and edamame.
  3. In a small bowl, whisk together all dressing ingredients.
  4. Toss noodles with edamame, cabbage, bell pepper, green onion, and any extra veggies.
  5. Drizzle with dressing and mix well. Sprinkle with sesame seeds if using.
  6. Chill for 10 minutes before serving, or enjoy right away.
