🍲 Lentil Soup

🌿 Ingredients:

  • 1 tbsp olive oil
  • 1 yellow onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 1/2 cups dried brown or green lentils, rinsed
  • 1 can (400g) diced tomatoes
  • 6 cups vegetable broth
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika (optional)
  • 1 bay leaf
  • Salt and pepper to taste
  • Optional: lemon juice and fresh parsley for garnish

👩‍🍳 Instructions:

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion, carrots, and celery for about 5–7 minutes until softened.
  3. Add garlic and cook for another minute.
  4. Stir in lentils, diced tomatoes, vegetable broth, cumin, paprika, bay leaf, salt, and pepper.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for 25–30 minutes until lentils are tender.
  6. Optional: Use an immersion blender to partially blend the soup for a creamier texture (leave some chunks).
  7. Remove bay leaf. Taste and adjust seasoning.
  8. Serve with a squeeze of lemon juice and sprinkle with fresh parsley.
