🥗 Mediterranean Chickpea Salad

🌿 Ingredients:

  • 1 can (400g) chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/3 cup crumbled feta cheese
  • 2 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • 1/2 tsp dried oregano
  • Salt and black pepper to taste
  • Optional: chopped fresh parsley or mint

👩‍🍳 Instructions:

  1. In a large bowl, combine the chickpeas, tomatoes, cucumber, red onion, and olives.
  2. Add the crumbled feta cheese on top.
  3. In a small bowl or jar, whisk together the olive oil, lemon juice, oregano, salt, and pepper.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Taste and adjust seasoning. Garnish with fresh herbs if desired.
