🌿 Ingredients:
- 1 can (400g) chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, finely chopped
- 1/4 cup Kalamata olives, pitted and sliced
- 1/3 cup crumbled feta cheese
- 2 tbsp extra virgin olive oil
- Juice of 1 lemon
- 1/2 tsp dried oregano
- Salt and black pepper to taste
- Optional: chopped fresh parsley or mint
👩🍳 Instructions:
- In a large bowl, combine the chickpeas, tomatoes, cucumber, red onion, and olives.
- Add the crumbled feta cheese on top.
- In a small bowl or jar, whisk together the olive oil, lemon juice, oregano, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Taste and adjust seasoning. Garnish with fresh herbs if desired.
