A low-carb take on the classic comfort food.
Ingredients:
- 1 large eggplant (sliced)
- 1 lb ground beef
- 1 cup ricotta
- 1 cup mozzarella
- ½ cup tomato sauce (no sugar added)
- Italian seasoning
Instructions:
- Roast eggplant slices.
- Cook beef and mix with tomato sauce.
- Layer eggplant, meat sauce, ricotta, and mozzarella.
- Bake at 375°F (190°C) for 25 mins.
Tip: Use zucchini slices if you don’t have eggplant.
