Ingredients:

  • 4 bell peppers, tops removed
  • 1 cup cooked rice or quinoa
  • 1 cup black beans
  • ½ cup corn
  • 1 tsp cumin
  • 1 cup salsa

Instructions:

  1. Mix rice, beans, corn, spices, and salsa.
  2. Stuff into bell peppers.
  3. Bake at 375°F (190°C) for 25–30 minutes.

Tip: Sprinkle with vegan cheese before baking for a cheesy crust.
