Ingredients:

  • 1 cup cooked quinoa
  • 1 grilled chicken breast, sliced
  • ½ cup cherry tomatoes, halved
  • ¼ cup corn kernels
  • ½ avocado
  • 2 tbsp Greek yogurt
  • 1 tbsp lime juice
  • Salt and pepper to taste

Instructions:

  1. In a blender, blend avocado, Greek yogurt, lime juice, salt, and pepper until creamy.
  2. In a bowl, layer quinoa, grilled chicken, tomatoes, and corn.
  3. Drizzle the avocado dressing on top.
  4. Garnish with fresh cilantro (optional).
