🥪 Avocado Egg Salad Sandwich

🌿 Ingredients:

  • 4 hard-boiled eggs, peeled and chopped
  • 1 ripe avocado, mashed
  • 1 tsp Dijon mustard (or to taste)
  • 1 tbsp lemon juice or lime juice
  • Salt and black pepper, to taste
  • Optional: chopped chives, parsley, or a pinch of paprika
  • 4 slices whole grain bread (or gluten-free if preferred)
  • Optional toppings: lettuce, spinach, sliced tomato, microgreens

👩‍🍳 Instructions:

  1. In a bowl, mash the avocado with lemon juice, Dijon mustard, salt, and pepper.
  2. Add chopped hard-boiled eggs and gently mix until combined.
  3. Stir in herbs or spices if using.
  4. Toast your bread if desired.
  5. Spoon the egg salad onto two slices of bread and add any toppings you like.
  6. Top with the other slices, cut in half, and serve!
