🥦 Cauliflower Stir-Fry with Tofu

🌿 Ingredients:

  • 1 block (350–400g) firm tofu, pressed and cubed
  • 2 tbsp sesame oil or olive oil
  • 1 small head of cauliflower, chopped into small florets
  • 1 red bell pepper, sliced
  • 1 cup snap peas or green beans
  • 2 cloves garlic, minced
  • 1 tbsp grated ginger
  • 2 tbsp low-sodium soy sauce or tamari
  • 1 tbsp rice vinegar
  • Optional: 1 tsp maple syrup or honey (for a sweet touch)
  • Optional toppings: toasted sesame seeds, green onions, or chili flakes

👩‍🍳 Instructions:

  1. In a large pan or wok, heat 1 tbsp oil over medium heat. Add tofu cubes and cook until golden on all sides (about 7–10 minutes). Remove and set aside.
  2. Add the remaining oil, garlic, and ginger to the pan. Sauté 1 minute.
  3. Toss in cauliflower, bell pepper, and snap peas. Stir-fry for 5–6 minutes until just tender.
  4. Return tofu to the pan. Add soy sauce, vinegar, and maple syrup if using. Stir to coat.
  5. Cook 2 more minutes, then remove from heat.
  6. Garnish with sesame seeds and green onions. Serve as-is or with brown rice.
