🌿 Ingredients:
- 2 salmon fillets (about 150–200g each)
- 1 tbsp olive oil
- Juice of 1/2 lemon
- 1/2 tsp garlic powder or 1 clove minced garlic
- Salt and black pepper, to taste
- 4 cups mixed greens (arugula, spinach, or spring mix)
- 1 cup cherry tomatoes, halved
- Optional: sliced cucumber, avocado, or red onion
For the lemon vinaigrette:
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 1/2 tsp honey (or maple syrup)
- Salt and pepper, to taste
👩🍳 Instructions:
- Preheat grill or grill pan over medium-high heat.
- Rub salmon fillets with olive oil, lemon juice, garlic, salt, and pepper.
- Grill salmon skin-side down for 4–5 minutes, then flip and cook 2–3 minutes until done (flakes easily with a fork).
- In a large bowl, toss greens and tomatoes with the lemon vinaigrette.
- Plate salad and top with grilled salmon. Garnish with avocado or red onion if desired.
