🐟 Baked Cod with Lemon & Asparagus

🌿 Ingredients:

  • 2 fillets of cod (or other white fish like haddock or halibut)
  • 1 bunch asparagus, trimmed
  • 2 tbsp olive oil
  • 1 clove garlic, minced
  • Juice of 1 lemon + a few lemon slices
  • 1/2 tsp dried thyme or oregano
  • Salt and black pepper, to taste
  • Optional: paprika or chili flakes for a kick

👩‍🍳 Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Place cod fillets on a lined baking sheet or in a baking dish.
  3. Arrange asparagus around the fish.
  4. In a small bowl, mix olive oil, garlic, lemon juice, herbs, salt, and pepper.
  5. Drizzle mixture over both fish and asparagus. Top fish with lemon slices.
  6. Bake for 15–20 minutes, until cod flakes easily with a fork and asparagus is tender.
