🌿 Ingredients:
- 2 medium sweet potatoes
- 1 tbsp olive oil
- 1/2 small red onion, chopped
- 2 cloves garlic, minced
- 1/2 tsp smoked paprika or cumin
- 1 can (400g) chickpeas, drained and rinsed
- 2 cups chopped kale (or spinach)
- Salt and pepper, to taste
- Optional toppings: tahini drizzle, hummus, chili flakes, or nutritional yeast
👩🍳 Instructions:
- Preheat oven to 400°F (200°C).
- Wash sweet potatoes, pierce with a fork, and bake for 35–40 minutes until soft.
- Meanwhile, heat olive oil in a pan over medium heat. Add onion and cook 5 minutes.
- Add garlic and smoked paprika; cook 1 minute.
- Stir in chickpeas and kale. Cook until kale wilts and chickpeas are heated through (5–7 minutes).
- Slice sweet potatoes open and fluff the insides with a fork.
- Top with the chickpea-kale mixture and your favorite toppings.
