🍠 Chickpea & Kale Stuffed Sweet Potatoes

🌿 Ingredients:

  • 2 medium sweet potatoes
  • 1 tbsp olive oil
  • 1/2 small red onion, chopped
  • 2 cloves garlic, minced
  • 1/2 tsp smoked paprika or cumin
  • 1 can (400g) chickpeas, drained and rinsed
  • 2 cups chopped kale (or spinach)
  • Salt and pepper, to taste
  • Optional toppings: tahini drizzle, hummus, chili flakes, or nutritional yeast

👩‍🍳 Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Wash sweet potatoes, pierce with a fork, and bake for 35–40 minutes until soft.
  3. Meanwhile, heat olive oil in a pan over medium heat. Add onion and cook 5 minutes.
  4. Add garlic and smoked paprika; cook 1 minute.
  5. Stir in chickpeas and kale. Cook until kale wilts and chickpeas are heated through (5–7 minutes).
  6. Slice sweet potatoes open and fluff the insides with a fork.
  7. Top with the chickpea-kale mixture and your favorite toppings.
